Coconut Horchata
(Serves 6)

- 1 fresh coconut
- 4 1/2 cups milk
- 1 cup sugar
Poke holes in coconut and remove juice. Set coconut juice aside. Cook coconut "meat" in a deep saucepan with its natural juices for 10 minutes. Remove from heat, pour into a blender, and grind together. Add the sugar and milk to blended mixture. Blend well and chill in refrigerator.
