Rice Pudding & Bananas Flambe
Serves 6
- 1 1/2 cups rice

- 2 quarts milk
- 1 cup condensed milk
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- Optional: raisins and toasted pecans
Wash rice by running it through cold water. Combine milk and rice in a heavy saucepan; cover and cook over a medium heat stirring occasionally until thick and creamy (about 45 minutes). Add condensed milk, sugar, vanilla extract and cinnamon (add raisins and toasted pecans if desired) and cook for five minutes. Spoon into serving dishes and top with pinch of ground cinnamon.
Bananas flambe topping
- 1 tablespoon butter
- 1/2 cup brown sugar
- 6 bananas
- Banana liqueur or spiced rum
- 1/2 cup heavy cream
Melt butter, add brown sugar and stir until sugar dissolves. Add bananas and saute for 1 minute. Remove from heat; add liqueur and place over flame for 30 seconds. Stir in heavy cream and remove from heat. Spoon over rice pudding and enjoy!
